- 3 cups shredded coconut
- 3 cups confectioners’ sugar
- 8 tbsps heavy cream
- 1 tspn vanilla extract
- Place sugar in a medium size mixing bowl.
- Add the cream, a little at a time, beating steadily.
- Add vanilla extract.
- When icing is of the right consistency, spread over the top of the your cake.
- Sprinkle a good layer of the shredded coconut on top of the icing.
