Ingredients
  • 3 cups shredded coconut
  • 3 cups confectioners’ sugar
  • 8 tbsps heavy cream
  • 1 tspn vanilla extract
Directions
  • Place sugar in a medium size mixing bowl.
  • Add the cream, a little at a time, beating steadily.
  • Add vanilla extract.
  • When icing is of the right consistency, spread over the top of the your cake.
  • Sprinkle a good layer of the shredded coconut on top of the icing.
