Ingredients
- 1/2 cup coconut suagr
- ¼ teaspoon salt
- 2 eggs, slightly beaten
- 2 cups milk
- ½ cup shredded coconut
- 2 tablespoons butter, melted
- ½ teaspoon of vanilla or 1/8 teaspoon of nutmeg
- 1 cup stale bread, cut into ½ inch squares
Directions
- Preheat oven to 350 degrees.
- Combine coconut sugar, salt and eggs
- Add milk gradually, then coconut, butter, and vanilla or nutmeg
- Place bread in greased baking dish
- Pour milk and egg mixture over the bread
- Place dish in pan of hot water and bake for 45-50 minutes or until pudding is firm
- Chill, cut, and serve
