Ingredients
  • 1/2 cup coconut suagr
  • ¼ teaspoon salt
  • 2 eggs, slightly beaten
  • 2 cups milk
  • ½ cup shredded coconut
  • 2 tablespoons butter, melted
  • ½ teaspoon of vanilla or 1/8 teaspoon of nutmeg
  • 1 cup stale bread, cut into ½ inch squares
Directions
  • Preheat oven to 350 degrees.
  • Combine coconut sugar, salt and eggs
  • Add milk gradually, then coconut, butter, and vanilla or nutmeg
  • Place bread in greased baking dish
  • Pour milk and egg mixture over the bread
  • Place dish in pan of hot water and bake for 45-50 minutes or until pudding is firm
  • Chill, cut, and serve
